This week has been a bit hard.
Because of that I am doing activities that will make me happy!
For instance, on Tuesday, I made some yummy cookies that I took to a friend.
Recipe
Dry: 2 cups almond flour
1/4 tsp. salt
1/4 tsp. baking soda
1.5 Tbs. coconut flour
2/3 C. plus 1 Tbs. finely shredded coconut
Wet: 5 Tbsp. Butter (melted)
1/4 C. honey
1.5 Tbs. vanilla extract
Optional: Roll in cinnamon or add some raisins
Directions: Mix wet and dry separately. Combine. Bake at 350 for 8-10 minutes.
