I actually found this on Pinterest, so unfortunately I can't take credit. But the cream is actually coconut cream (just the fat), vanilla, and honey. The cake itself is sliced just by basically cutting off the green parts of the watermelon and making it into a rectangle shape. After cutting the watermelon, you frost it with the coconut cream and decorate with almonds and berries. I hope this helps!
