Being home is bitter sweet, cause I always want to stay longer at Lake Tahoe.
The first day, we drove through a massive dust storm. Then when we arrived at our hotel, the power was out for 5 hours! It was a crazy start to a crazy vacation! And after a 10 hour car ride… I was hungry! Because the power was out I wasn't able to cook anything or buy anything. So we drove further out of town and went to a grocery store for the bare essentials. I was so hungry and was quickly approaching what I call "survival mode". I am not myself when I am hungry…. Haha. Anyways, I found this salad and "improvised". Not being able to eat many things in the store I found joy in what I could have. And I'm thankful for my supportive Dad who let me get whatever I needed to in this "little emergency".
Also, I discovered that I love Blue Cheese!
I am so thankful that I was able to travel to beautiful Lake Tahoe, California. The last time I was there, two years ago, I was deathly ill and wasn't sure why. It was so wonderful to be able to enjoy the lake and to be healthy. In these past two years I have really accomplished a lot! Also, this entire week I have felt incredibly healthy. This is truly a huge blessing and I am very thankful.
