Strawberry Shortcake

One of the most difficult things about Crohn's disease is that I can't/don't eat everything that I would like to.
To shortly summarize I don't eat gluten, grain, dairy (most), sugar, anything processed, soy, GMO, MSG.
So now what?
I am left to experiment and to make the most of what I've got.
For most of you that know me, will know that I LOVE to cook, wich is a primary reason why this has been so hard for me.
I am trying to find new recipes that I really enjoy and that will make me happy and healthy (as well).
This is my latest creation (courtesy of Internal Bliss by Dr. Natasha Campbell-McBride)

Strawberry Shortcake
(Shh!  it's gluten free and you can't even tell!)



Shortcakes:
1/3 C. melted butter
6 eggs, lightly beaten
1/4 tsp salt
1/2 C. honey
1 Tbsp Vanilla extract
1/4 tsp Almond extract
1/2 C. coconut flour

Topping:
2 C. fresh strawberries, sliced
2 Tbsp honey
1 tsp vanilla extract
