Thanksgiving 2016

Thanksgiving has been a complete success this year!  I am so thankful for my health and my re-found love for cooking.  I am thankful to not be afraid of eating anymore. I am thankful that this is no longer emotionally hard for me. I am thankful for all those who support me in my journey and those who have inspired me in many ways, whether it be cooking, motivation to stick to my healthy goals, words of encouragement, and simply believing that I will stay and get healthy once again.  And I am thankful for my Savior, who understands all of what I have ever felt. 


I have had several people ask me, "if you don't eat dairy, sugar, wheat, processed food, etc. what do you eat for Thanksgiving?"  Well folks, here ya go!  These are some of the highlights of what I ate today, let me know what you think. 



Mom's Sweet Potato Pie

*Actually made with butternut squash, and sweetened with grade B maple syrup (deeeliscouuus!!) Topping made with flax, coconut, buckwheat, pecan meal, coconut, pecans, sucanat.


Homemade Cranberry Sauce

*Really easy!  Just simmer orange juice, orange zest, honey, and cranberries.  Let it sit in the fridge for several hours to thicken.  So much healthier than the canned cranberry sauce because there is no high-fructose corn syrup.  



Roasted Pine Nut Salad with Berry Dressing

*With so much heavy food on Thanksgiving it is nice to have some lighter food!  


Chocolate Mousse Pie

* Super duper yummy!!  Full of veggies but you would never know ;)

Pumpkin Pie

*So flavorful! Frozen, cashew based, fresh pressed carrots from the garden, chocolate sauce, need I say more?!  Recipe is from Melissa Chappell, find her cookbook here.
