Ginger Lime Coconut Chicken Soup (SCD, Paleo, Gluten Free)

Hey friends! As promised, I have some recipes coming your way. One of my FAVORITE things to do is be creative in the kitchen. With that comes lots of pinterest searching, recipe adapting, and even recipe inventing.

And if you have a funky tummy (like me) then you may often find yourself wondering "what the heck do I eat?!" Through lots of trial and error, I am figuring it out along the way and I wish to share it with you!

Tonights Menu: Ginger Lime Coconut Chicken Soup

Wow! That's a mouthful haha! But really guys, you need to try this recipe.

Ingredients:

-Chicken Bone Broth
-Free Range Chicken
-Coconut Milk (no guar gum, no additives)
-Lime (2-3)
-Ginger
-Carrots


And vualá! It is really quite simple.

Directions:

 Bring the broth up to a boil and add the chicken into the broth to cook. If raw this will take 15-20 minutes. While it is boiling slowly add the peeled and cubed carrots, ginger (about 1-2 tablespoons), lime juice, and at the very end add the coconut milk.

Serve with additional lime juice and if you do eat rice noodles (not paleo or SCD legal) those are a great addition as well. :)


*** Please note about the coconut milk. That it is EXTREMELY important to beware of additives in your food, especially for those with less than desirable digestion. This brand has been excellent for me and can be found on Amazon or in some stores if you search hard enough.
